20g cacao butter (if you don’t have access to cacao butter, you can replace with coconut oil or regular butter)
20g coconut oil
1/3 cup good olive oil
a pinch of salt
To melt the chocolate, double boil it to make sure you don’t burn it.*
Keep about 20g of chocolate aside for later.
Mix all ingredients together in a bowl and put in the refrigerator for a few hours until set.
Spoon out one tablespoon of mixture and roll into balls.
Set aside a bowl of Sweet Nibs.
Take the chocolate you kept aside for later, melt it and rub a small amount in each palm of each hand.
Roll your truffles in your palms to lightly coat them in melted chocolate and then toss the truffles in the bowl full of sweet nibs. The melted chocolate will help the nibs stick to the truffle.
* To Double Boil, just boil some water in a pan, place the chocolate in a heat-proof bowl and place the bowl on top of the pan of boiling water. Stir the chocolate until melted.
