Vegan Chocolate Mousse

Who doesn’t love a delicious bowl of chocolate mousse? That soft and silky texture can turn any frown upside down! So if you love chocolate as much as we do, this blender recipe is for you. It’s also dairy-free and plant-based, so if you’re lactose intolerant or vegan, you can still enjoy this treat.

2 cups cashews (soaked for a few hours)
1 cup water
1/4 cup date syrup (or sweetener of your choice)
3 tbsp coconut oil
5 tbsp cacao powder
1/4 tsp salt
1/4 tsp vanilla bean seeds (optional)
The key to this recipe is having nice smooth cashews, so it’s important to have a good blender. The cashews should be very smooth with a mousse-like texture and no lumps.
1. Add your soaked cashews and water to the blender and mix until nice and smooth. 2. Add half of the cacao powder along with the remaining ingredients and blend well. Now you can add the remaining cacao powder (adding the powder slowly relieves some strain on the blender). 3. Garnish with chocolate shavings, cacao nibs, nuts, mint or any other topping of your choice.
