When we discovered Blue Tokai Coffee Roasters, we knew we had to make a coffee bar. We did lots of experiments and came out with a clear winner.
The mix between coffee and chocolate really is a match made in heaven, but if paired incorrectly it can be very bitter and a little overwhelming. We wanted to make a bar that had the coffee/chocolate punch, but was still an easy-to-eat, balanced bar with some softness on the palate. For this reason, we used one of our cacao beans that has some natural softness with fruity notes and low acidity and we paired this with the MS Estate Certified Organic coffee, which also has a balanced and fruity profile. After experimenting with many different cacao ratios, we felt that 65% cacao worked best, as the little extra sweetness made it a really easy and enjoyable bar to eat.
