Dense & Delicious Vegan Chocolate Mousse

This is one my favourite recipes and is always a crowd pleaser at any dinner party.

You will require a good blender for this to get the smoothness and creaminess in texture.

3 cups soaked cashews 1 cup water (keep a little extra, which you can add if it is too thick) 1/4 cup +1 tsp date syrup (or other sweetener of your choice) 2 1/2 tbsp coconut oil 5 tbsp cacao powder 2 tsp of fresh vanilla pod seeds (optional; if you don’t have fresh vanilla, you can always use 1/4 tsp vanilla essence or leave it out) 1/4 tsp salt

Add the cashews and water into a blender and blend until combined well. Add all other ingredients and keep blending until the consistency is smooth and you have no pieces of nuts.

You may need to add some extra water so that the mixture runs smoothly around the blender, but it should not be watery.

Take out of the blender and place in the refrigerator for one hour.

This will keep as long as 3 days, if stored in an airtight container in the fridge.
